Banana Buckwheat pancakes

Buckwheat is the perfect ingredient to make pancakes gluten free, also it has a very nice nutty taste.
 

Servings: 2-3

Cooking time: 30 min.
 

Ingredients:

  • 1 cup Buckwheat flour 
  • 2 Bananas
  • 2 eggs
  • 1 cup water
  • 1 teaspoon cinnamon
  • Olive oil for coating the pan.
  • 1 cup blueberries
  • 4 spoon honey

 

Preparation:

  1. Mash the bananas in a bowl, try to use ripe bananas, it will give the sweet taste to the pancakes.
  2. Add the eggs and mix with the bananas.
  3. Them add the water, the buckwheat flour and cinnamon in the bowl, and mix them with the eggs and bananas, use a fork to stir until you no longer see clumps of flour.
  4. Put a small amount of vegetable oil on the pan with a paper towel to coat.
  5. Ladle the batter onto the hot surface to the desired size, reduce the heat to medium low.
  6. When the edges look dry, and bubbles start to appear and pop on the top surface of the pancake, turn over (it takes approximately 2 minutes). Then cook another 2 minutes the other side of the pancake.
  7.  Serve the pancakes warm with your favorite toppings, for this recipe we use honey and blueberries. Another example of delicious toppings is goat cheese with honey and nuts.


Note: If you notice that your pancakes are rapidly browning, turn down the heat.
