Banana Buckwheat pancakes

Buckwheat is the perfect ingredient to make pancakes gluten free, also it has a very nice nutty taste.
Servings: 2-3
Cooking time: 30 min.
Ingredients:
- 1 cup Buckwheat flour
- 2 Bananas
- 2 eggs
- 1 cup water
- 1 teaspoon cinnamon
- Olive oil for coating the pan.
- 1 cup blueberries
- 4 spoon honey
Preparation:
- Mash the bananas in a bowl, try to use ripe bananas, it will give the sweet taste to the pancakes.
- Add the eggs and mix with the bananas.
- Them add the water, the buckwheat flour and cinnamon in the bowl, and mix them with the eggs and bananas, use a fork to stir until you no longer see clumps of flour.
- Put a small amount of vegetable oil on the pan with a paper towel to coat.
- Ladle the batter onto the hot surface to the desired size, reduce the heat to medium low.
- When the edges look dry, and bubbles start to appear and pop on the top surface of the pancake, turn over (it takes approximately 2 minutes). Then cook another 2 minutes the other side of the pancake.
- Serve the pancakes warm with your favorite toppings, for this recipe we use honey and blueberries. Another example of delicious toppings is goat cheese with honey and nuts.
Note: If you notice that your pancakes are rapidly browning, turn down the heat.
